Dill Pickle Chicken Parm
Serves: 2–3
Time: ~40 minutes
Ingredients
Chicken
2 large chicken breasts (butterflied or pounded thin)
Salt & pepper
½ cup flour
2 eggs (beaten)
1 cup breadcrumbs (panko preferred)
½ cup grated parmesan
1 tsp garlic powder
1 tsp dried oregano
Sauce
1½ cups Dill Pickle Pomodoro sauce
¼ cup finely chopped dill pickles
1 tbsp fresh dill
Topping
4 slices provolone or mozzarella
Extra parmesan for finishing
Instructions
1. Bread the Chicken
Season chicken with salt and pepper. Dredge in flour, dip in egg, then coat in the breadcrumb/parmesan mixture. Press firmly for an even crust.
2. Fry Until Golden
Heat oil in a skillet over medium heat. Fry chicken 3–4 minutes per side until golden and crispy. Transfer to a paper towel-lined plate.
3. Build the Sauce
Warm the Dill Pickle Pomodoro sauce in a pan. Stir in chopped pickles and fresh dill. Simmer for 2–3 minutes.
4. Assemble
Place chicken in a baking dish or cast iron pan. Spoon sauce over each piece (lightly, to keep the crust crisp). Top with cheese.
5. Bake
Bake at 400°F (200°C) for 10–12 minutes until cheese is melted and bubbly. Broil 1–2 minutes for a golden finish if desired.
