Crafted Rosé Sausage & Pea Pasta

Ingredients (Serves 4–6)

  • 500 g shell pasta (lumaconi or medium shells)

  • 5–6 Italian sausages (about 500–600 g)

  • 1 jar (710 mL) The Savory Spoon Crafted Rosé Base

  • 1 cup (250 mL) 33% cream

  • 2 cups frozen peas

  • 2 tbsp olive oil

  • ½ cup freshly grated Parmesan, plus more for serving

  • Freshly cracked black pepper

  • Salt, to taste

Instructions

  1. Cook the pasta

    • Bring a large pot of salted water to a boil.

    • Cook pasta until al dente according to package directions.

    • Reserve 1 cup of pasta water before draining.

  2. Cook the sausage

    • Remove sausage meat from the casings.

    • Heat olive oil in a large skillet over medium-high heat.

    • Crumble and brown the sausage until fully cooked, about 8–10 minutes.

  3. Create the sauce

    • Add the entire jar of The Savory Spoon Crafted Rosé Base.

    • Stir in the cream.

    • Simmer gently for 5 minutes.

  4. Add peas

    • Stir in the frozen peas and cook for 2–3 minutes until heated through.

  5. Combine

    • Add the drained pasta to the sauce.

    • Toss until evenly coated.

    • Add reserved pasta water as needed to achieve your desired consistency.

  6. Finish

    • Stir in the Parmesan cheese.

    • Season with freshly cracked black pepper and salt to taste.

To Serve

Garnish with:

  • Freshly grated Parmesan

  • Cracked black pepper

  • A drizzle of extra virgin olive oil (optional)
